Hot Potato Cakes!

I promised you a break from potatoes and you've had it!  It has been
 more than 3 months since I posted anything about potatoes it's time to have another great potato recipe!  We did some potato canning and freezing in the fall last year (see the blog at http://wickedraven.blogspot.com/2013/08/a-few-extra-potatoes-or-lot.html ) and now that we are rolling nicely into spring here it is time to make use of some of that bounty.


I had occasion to need a quick breakfast meal not too long ago and we had some extra folks here as well - neither of which is unusual for us.  I was able to grab a bag of the frozen mashed spuds and thaw them in hot water (leave them in the bag sealed and cover with hot water in the sink - quick thaw) while the bacon cooked. Of course the bag I grabbed had the batch that I made that were a little thinner than the others, but no worries - I was able to add just a bit of potato flakes and they were just right to use in the recipe.

Canned/frozen Potato Cakes
1 qt jar canned potatoes - with or without garlic - drain well and smash
You can also use about 1/2 gallon frozen mashed spuds
2 eggs beaten lightly
1 C. potato flakes
1/2 C. melted butter
Mix all well and form into patties - I sometimes form them into balls and then mash them onto the griddle.  If the mixture is too stiff add a little milk to thin it out.  Not too much - it will get too thin to make the patty.  If you do get too much milk in add a few more potato flakes (by the teaspoon).
Cook for about 4 minutes on each side or until browned to your taste.  I like to cook them in the bacon grease left in the pan.


Above I have the bacon finishing as I start the potato cakes.  It works really well as long as there isn't too much grease in the pan.  You may have to drain it a little before frying the cakes.


Once all the cakes and the bacon are done - fry a couple of over easy eggs.  Place two cakes on a plate with an egg on top and put a few slices of bacon on top of that.  Yummy!
These cook up fast, are hearty and can be cooked over a campfire if that's where you're at!
